my son and i have enjoyed a lazy day watching movies in our pjs, munching on snacks, and all bundled up in blankets together. with it being a lazy day i didnt feel like cooking today, but had some food that needed to be used/eaten - after dinner i decided to share what i made as both meals were easy and most people will have the ingredients in their homes.

food needing to be eaten: breakfast sausage
meal: brunch

sausage, egg (cooked to your liking), toast
- my son had an over medium egg with two sausage links and toast with strawberry jam on it
- i had an over medium egg topped with cholula on two sausage links and toast with neufchatel cheese on it

easy to make and easy to customize.
couple of variations we enjoy: my combo with avocado and/or tomato and/or spinach, instead of toast an egg with waffles or pancakes and a little bit of syrup with the egg & sausage on top, egg & sausage sandwich (i love them on blueberry bagels!), make fruit salad as a side with your sausage & eggs.

food needing to be eaten: green onions, chicken breasts
meal: dinner

chicken breasts seasoned with habanero powder, seasoned salt, ground pepper, paprika, cumin, onion, and garlic - bake in oven at 350-400 degrees

quinoa cooked with (frozen) peas, green onions - once cooked add same seasonings used on chicken plus (freshly grated) parmesan cheese

take chicken out of oven once quinoa is done cooking - they both should be ready about the same time, especially if you cooked around 400 degrees

serve quinoa and then put chicken on top of quinoa - top with (freshly grated) parmesan cheese

voila! takes around 30 minutes total, prep and cook time

i didnt take pics of these meals so the pics i have used today are totally from google image searches lol

anyhoo, maybe this will be helpful to someone out there - i hope so. that is the point of sharing with y'all lol
