A Spin on Huevos Rancheros
This recipe would be great for any meal!
Black Beans & Meat
I used leftover Rotisserie Chicken we had for the meat.
We also had left over Organic Refried Black Beans.
This gave me a delicious idea ;-)
(Quantities will depend on how many you are cooking for...)
Sauté (1/4 to whole) Onion and (1 tsp minced) Garlic with oil of your choice (I used butter) - Cook until Onion is almost clear.
Add (pre-cooked) Meat.
Add Sea Salt, Pepper, Ground Cumin, Hot Paprika, Chili Powder, and Cayenne Pepper. (Amount varies depending on amount of ingredients you are using. I go with a dusting that covers everything ;-)
Add beans - regular or refried.
Mix & Cook thoroughly. (When using Refried I like to cook it until it had a "crispy" layer on bottom, mix, and repeat.)
Use this mix with Eggs for Huevos Rancheros, or with Fajitas, Tacos, Wraps, Mexican Dishes, and the like.
